Easy Taco Pie
1 pound ground beef or turkey 1/2 cup (2 ounces) shredded
1 medium onion chopped (1/2 cup) Colby-Monterey cheese
1 package taco seasoning mix 1 medium tomato, chopped
5 ounces) Old El Paso chopped (3/4 cup)
green chiles, undrained 1-1/2 cup shredded lettuce
1/2 cup Original Bisquick® mix 2 medium green onions,
1 cup milk sliced (2 tablespoons), if
2 eggs desired
Heat oven to 400º. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook meat and onion over medium high heat. Stirring occasionally, until meat is no longer pink. Sprinkle taco seasoning mix over meat mixture, mix well. spread in pie plate. Top evenly with chiles.
In medium bowl, stir Bisquick mix, milk and eggs until blended. Pour into pie plate. Bake 25 minutes. Top with cheese and tomato. Bake 2 to 3 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Sprinkle with lettuce and onions.
